Job Description

Key Responsibilities

Product Development

  • Innovate and improve recipes, dressings, and toppings focusing on taste, nutrition, and shelf life
  • Collaborate with chefs and nutritionists to develop seasonal and functional menu items
  • Conduct sensory evaluations and pilot runs to refine product quality and plan scale-up from lab to production

Quality Assurance Control

  • Develop and implement SOPs related to food safety, hygiene, and ingredient handling
  • Monitor raw materials and vendor compliance with quality and safety standards
  • Conduct audits and inspections across kitchen and supply chain operations
  • Assist in root cause analysis and corrective action for quality issues
  • Coordinate smooth product rollouts ensuring adherence to quality standards

Nutritional Analysis & Labelling

  • Ensure accurate nutritional profiling and allergen declarations for menu items
  • Collaborate with marketing and compliance teams on transparent labelling and claims

Process Optimization

  • Evaluate and improve production processes for consistency and efficiency
  • Standardize preparation methods for scalability across outlets
  • Identify opportunities to reduce waste, improve yield, and enhance efficiency

Documentation & Compliance

  • Maintain accurate records of product specifications, SOPs, and testing reports
  • Ensure compliance with FSSAI, HACCP, GMP, ISO standards, and other regulations
  • Maintain documentation and traceability for all ingredients and processes

Training & Auditing

  • Design SOPs and hygiene protocols as departmental benchmarks
  • Represent the department in internal and external audits

Requirements

  • Bachelor's or Master's degree in Food Technology, Food Science, or related field
  • 2–4 years' experience in QSR, food manufacturing, or culinary R&D
  • Strong knowledge of ingredients and their functionalities
  • Proficiency in food lab testing, sensory evaluation, and shelf-life studies
  • In-depth understanding of HACCP, GMP, ISO 22000, and local food safety laws
  • Experience with nutritional analysis tools and food labelling standards
  • Familiarity with cold-chain logistics and fresh produce handling
  • Awareness of culinary trends and consumer behavior in the health food sector
  • Passion for healthy eating and innovative food product concepts
  • Excellent communication and cross-functional collaboration skills
